This delightful recipe offers an excellent opportunity to utilize an abundance of summer fruits such as raspberries, blueberries, strawberries, or any other fruit of your preference. Ingredients
Crust:
2 cups flour
1/2 tsp baking powder
1/4 cup sugar
1/2 tsp salt
1 cup cold butter
Streusel:
1 cup flour
1/2 cup butter
1/2 cup brown sugar
Berry Filling:
3 cups berries of your choice (or plums)
2 Tbsp. of flour
2 tsp of grated lemon rind
1/4 cup sugar
- Preheat oven to 350 degrees
- Crust: Combine flour, baking powder, sugar, and salt. Mix.
- Add cold butter and mix until it resembles a coarse meal
- Streusel topping: In a separate bowl combine flour, butter, and brown sugar.
- Work with fingers until the flour is absorbed.
- Berry filling: In a separate bowl combine berries, flour, grated lemon rind, and sugar.
- Grease or line a 9×13 inch baking dish
- Pat the flour combo into baking dish
- Bake for 20 minutes
- Let cool slightly
- Add Berry mixture on top
- Top with Streusel
- Bake again for 35 minutes
- Serve with Ice Cream, Whip cream, or fresh berries on top
